| The grapes are pressed in Cramant on Perrier-Jouët’s traditional wooden presses. After it is racked, the clear juice is transported to Épernay for fermentation. In the cellar, modern stainless steel tanks provide precise temperature control for the alcoholic and malolactic fermentations of the base wine. Once all the base wines are fermented and racked, Chef de Caves Hervé Deschamps begins to meticulously taste from over 300 separate wines to choose the most outstanding lots, which are masterfully blended into the final cuvée. In order to preserve the airy elegance of the rosé, Hervé opts to age the wines for four to five years as opposed to the standard six to seven years. |
